Day 5 – Starting off with a big breakfast

I’m hoping to sell some serious furniture today so I’m not gonna let a small thing like feeling hungry distract me. =)

For breakfast this morning I had a cup of coffee, bowl of oatmeal, strawberries, a piece of wheat toast with peanut butter, and almond milk. What did you eat?

For lunch… Some carrots dipped in hummus and a handful of nuts. Another cup of coffee and a glass of water.


Day 4 – Hunger Cannot Be Ignored

Breakfast – coffee, almond milk and toast with peanut butter

Lunch – veggie patty, red & green peppers, mushrooms, and jalapenos (no cheese), and tortilla chips

I’ve come to find (especially on this challenge) that I need to have snacks in between meals because I do not function well when I’m hungry. Thank you to Evelyn and Jose for lunch and letting me “be picky” with what I order. =)

Dinner – a light dinner tonight, all natural strawberry fruit snack, some carrots and a handful of mixed nuts, and water. Tomorrow’s breakfast should be plenty filling. =)

Day 3 – Morning with Mimi

So I finished up my last bit of cantaloupe. Mimi hung out with me this morning – had a cup of coffee (with soy milk) with her.
Lunch – veggie sandwich with wheat bread, lettuce, tomatoes, cucumbers, onions, banana peppers, vinegar and salt and pepper. A cup of water for beverage.

Dinner – had me a veggie burger on wheat bread with spinach, mushrooms, and tomatoes. …and a glass of water of course, actually it was two glasses (I was pretty thirsty!).

Day 2 – Starting the day with cantaloupe


Gooood morning! This is the start of day 2, had some cantaloupe for breakfast and a glass of almond milk =)

Lunch gone bust lol. Went to Chili’s with Jared and I ordered the sweet corn soup (supposedly a great vegetarian choice) unfortunately it contained milk AND cream so I had to send it back and stick with just the tortilla chips and salsa and water.

Dinner: got home pretty late, but managed to sautee some mushrooms and onions for dinner. What better way to end the night but with a bowl of cantaloupe and watching Monsters Inc =)

Day 1 – Here we go!

This morning I had strawberries and a cup of almond milk for breakfast.  Some say that’s not much of a breakfast but I think there are people out there that don’t even have that much to eat for breakfast.

How do  you feel about breakfast? Do you put extra effort into making sure you eat something in the morning?

For lunch I had some raw carrots with hummus and a glass of water. I do believe that hummus and fruits are the things that are gonna get me through this challenge =)

For dinner… Veggie burger (no cheese) and a cup of assorted fruit and water.

So this is my first post to my blog for my 30 day vegan diet.

When I first started thinking about accepting the challenge the majority of those that I told opposed the idea and only a handful said that they wouldn’t do it but good luck lol

So I decided that I am going to officially attempt the challenge September 1st and I am going to use this blog to track my daily thoughts and record everything I eat.
